What's the reaction when you serve parsnips? "Ewwwww!"? Hmmm...You must have bought the big bruisers! Baby parsnips are fabulously sweet and tangy; be sure you buy the smallest ones available- preferably no thicker than a man's thumb. I dice my parsnips, steam until fork tender,then I add eggbeaters, chopped onion and parsley to form into flat patties which I bake on a nonstick cookie sheet until golden brown.

A few years ago on Christmas Day I was preparing dinner for my family. They had come from out to town to spend the holidays with me. It was around 10 am and I was in the thick of cooking when the electricity went out. It came back on for a few minutes and then went off again and did not come back on. Not one to watch the weather, I looked outside to see ice on the trees. The storm continued and no cooked meal was finished. Dinner turned out to be cold spam sandwiches and chips.
