Jan 2001 “Cooking Tips” Winner — Betty Lomonico

“Many years ago, I received a tip on how to remove the skin from bell peppers after broiling. After the skin of the peppers blister and start to turn black, remove the peppers from the broiler. Place the peppers in a brown paper bag and close tightly. Let the peppers sit in the bag for about 10 minutes. Then shake the bag gently and remove the peppers. Much of the skin will already be off and the rest will peel off quite easily.”

“A few years ago, when visiting my girlfriend, we decided to make corn on the cob on the BBQ grill. I had never done this before but (I guess) gave her the impression that I knew what I was doing. I peeled back the husks and removed the silky threads. I then brought the husks back up on the corn and placed them under running water for a while. I did not place the corn on the grill immediately. When I did - after several minutes - all of the corn burst into flames. It was quite spectacular! I quickly grabbed the BBQ thongs and threw the corn onto the brick patio and rolled them until the fire went out. Several years have gone by and I now know that the corn must be soaked in water and cannot dry out before grilling. My girlfriend is now my wife and we both admit that the "flaming corn" was the best corn on the cob we ever had!”
