A lot of recipes call only for egg whites and I really hate throwing away the yolks. After separating the eggs, slide the yolks into a bowl of cold water so they don’t dry out. Then transfer them to boiling water in a small saucepan. Gently simmer for about 5 minutes until they are cooked through. Chop the yolks and refrigerate. I generally crumble these on salads. You can also add a little mayonnaise and spread on crackers for a quick snack.

July 2007 Cooking Disasters Winner Regina Rogers
This past Easter, I wanted to make a festive spring-time dessert and decided on a cup cake tree. I bought a 4 tier metal tree with the holders angled slightly so you could see the tops of the cup cakes. I also went all out with decorations – pastel sprinkles, jelly beans, paper cups with bunnies, coconut colored green to look like grass. I made several batches of frosting in various pastel colors – pink, lavender, yellow, mint green.
As I was making all of this frosting, I remembered a tip I saw on a popular cooking show – just add a little vanilla to the frosting for extra flavor. I figured – why not – these were going to be very special cupcakes. And they were just beautiful!
I placed the cupcakes on a cookie sheet and set them aside until after dinner. I started a pot of coffee, arranged them in the tree and set it on the dining room table. There were many oohs and aahs from the family.
As we were enjoying our first cupcake something strange started to happen. One by one, the frosting started slipping off of the tops of the cupcakes, plopping onto the table. We were pretty stunned and all of us just sat there until there were a bunch of naked cupcakes in the tree and a pool of frosting on the table. At that point it became pretty funny.
I did figure out what happened…the vanilla thinned the frosting too much. They were okay when they were just sitting on the cookie sheet but could not defy the laws of gravity when placed in the angled holders.
