Thai Noodle Delight

This tantalizing cold salad can be made ahead and only takes 15 minutes of prep time. It is seasoned with Urban Accents Thai Garden – an intriguing oriental blend of sweet and savory spices, which impart the subtle nuances found in classic Thai cooking. Cinnamon and garlic mixed with cloves and red pepper are just a few of the “sweet-heat” pairings that make this blend so enticing.

Served Best: Cold
Prep Time: 15 Minutes
Serves: 4 – 6

Ingredients:

2 Pkgs. Yabisoba Noodles (also known as Soba Noodles)
1 tsp. chili paste
¼ cup + 2 Tbsp white wine vinegar
2 Tbsp. Urban Accents Thai Garden
3 Tbsp. lime juice
3 Tbsp. sugar
¼ tsp. salt
3 tsp. sesame seed oil
½ cup fresh cilantro, chopped
2 cloves garlic, minced
2 carrots, grated
½ cup dry roasted peanuts

Directions:

Stir-fry noodles as directed on package. In a large bowl, mix all other ingredients until sugar is dissolved. Add cooked noodles to bowl and chill for 2 hours or overnight. Serve cold.
