Moroccan Orange Roughy

Orange Roughy is a firm white fish that has a delicate shellfish flavor and is primarily harvested in New Zealand and Australia. In this recipe, the mild flavor of the fish is a perfect pallet for the seductive blend of North African spices found in Moroccan Road seasoning. The major flavors are coriander, cumin, cinnamon and mint without any salt or sugar. The Orange Roughy is made in a matter of minutes under the broiler or on the grill.


Ingredients:

4 Orange Roughy fillets (also great with catfish or tilapia)
2 tsp. extra virgin olive oil
2-3 tbsp. Urban Accents Moroccan Road
Plain yogurt
Lemon wedges

Preparation:

Preheat broiler
Wash fish fillets in cold water and pat dry
Coat fillets with olive oil and sprinkle with Moroccan Road
Place on pre-heated broiler pan
Broil 3 to 4” below heat source without turning for 10 to 12 minutes until fish is not opaque throughout
Serve on warmed plates with a dollop of yogurt and a lemon wedge

Note: Grilling fish of certain types can be tricky but can be done with wonderful results if you are careful. The grill grates must be very clean, free of debris, and well oiled. Fish fillets can be put right on the grill grates but if they are very thin, you may want to put them in a grill basket. Grill the fish until no longer opaque. This will vary depending upon the heat of your grill.
