The Original Chocolate-Candy Cane Cookie

If you look in the Gourmet Magic Recipe Archives, you can see that we featured our favorite Christmas Cookie recipes in December 2004. We are still making these cookies in our family but added a new variety after seeing a recipe in the Indianapolis newspaper last year. Anyone who likes chocolate chip cookies will love these cookies. The addition of crushed candy canes is a nice surprise!


Ingredients:

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
1/2 teaspoon peppermint extract
2 large eggs
1/2 cup crushed candy canes
One 12 oz. bag semi-sweet chocolate chips

Preparation:

Preheat oven to 375 degrees.

Combine flour, baking soda, and salt in a small bowl.

Beat butter, sugars and peppermint extract in a large bowl until creamy. Add eggs one at a time. Gradually beat in flour mixture. Stir in candy cane pieces and chocolate chips.

Drop by rounded teaspoons on parchment-lined (or sprayed) baking sheets. Bake 9 to 11 minutes until golden brown. Cool on baking sheet for 2 minutes; transfer directly into your mouth!
