Thai-flavored Papaya and Vegetable Rolls

Here is a unique recipe for our customers who purchased a Sushi Making Kit or a Sushi Magic Home Sushi Maker in the past. With traditional sushi as a starting point, the incorporation of papaya, cucumber, Thai basil and green curry creates an exotic flavor combination. Completely vegetarian and easy to assemble.
Ingredients:
¼ English (hothouse) cucumber, seeded and julienned
¼ carrot, peeled and julienned
¼ papaya (cut lengthwise), peeled and seeded
¾ sheet nori
1 cup prepared sushi rice
2 fresh Thai basil leaves
2 tablespoons green curry paste
Preparation:
Cut cucumber into strips, each ¼ inch thick. Cut carrot and papaya into strips the same size. Set aside on a plate.
Cover a sushi mat with plastic wrap. Place nori over plastic, glossy side down, and, with wet fingers, spread prepared sushi rice over nori. Holding surface of rice with one hand, turn over rice and nori, placing rice on plastic.
Arrange cucumber, carrot and papaya strips and basil leaves in center. Roll tightly.
Unroll mat, remove plastic, and transfer roll to a cutting board. Wipe a sharp knife with a damp towel and cut roll in half. Cut rolls in half, then cut each piece again, wiping knife after each cut.
Arrange pieces on plate and spoon curry paste alongside.
Makes 8 pieces.
