Spicy Bean Dip

No other ethnic food has imparted the spirit of “Fiesta” in quite the same way as the gift of Mexican cuisine. The flavors are spicy, exuberant and tantalizing. This “Spicy Bean Dip” is great to serve at any gathering and extremely easy and quick to make. It is also fantastic as a burrito filling or as a sandwich spread.


Ingredients:

1 tablespoon oil
½ small onion, finely chopped
4-5 jalapenos, minced
½ teaspoon oregano
¼ teaspoon cumin
2 ½ cups refried beans
Salt to taste

Preparation:

Heat one tablespoon oil in a skillet and sauté onions and jalapenos until tender. Add oregano and cumin and cook for 2 to 3 minutes. Stir in beans and season with salt. Spread beans on a dinner plate or platter (or put in a dip bowl) and sprinkle liberally with freshly grated cheese. Serve with chips and/or freshly cut up vegetables. Spicy Bean Dip can also be used as a burrito filling or as a sandwich spread.

Makes about 3 ½ Cups
