Hawaiian Pasta Salad

“Homemade with a little help” describes this pasta salad recipe. Start with a package of Pasta Partners Hawaiian Pasta Salad, which includes a mix for poppy seed dressing and handmade pasta with fun shapes such as palm trees and pineapples. Add fresh fruit and vegetables and it’s ready to take to a BBQ, picnic or neighborhood block party. It’s always a hit and someone is bound to ask for your recipe!


Ingredients:

One package Pasta Partners Hawaiian Pasta Salad
2 cups chicken, cooked and diced (optional)
8 oz. can pineapple tidbits, drained
11 oz. can mandarin orange slices, drained
1 small red onion, diced
2 small avocados, diced
½ cup olive oil
¼ cup white wine vinegar
½ cup slivered almonds

Directions:

Heat 4 quarts water to boiling. Stir in pasta and return to boil. Cook for 5-8 minutes. Do not overcook, pasta should be quite firm for salads. Rinse with cold water until cool.
Mix the poppy seed dressing packet with olive oil and white wine vinegar.
Pour dressing over pasta and mix in pineapple, oranges, red onion, avocados and chicken (if desired).
Top with slivered almonds.
Chill for at least one hour.

Please Note: This recipe can be made without purchasing the Pasta Partners Hawaiian Pasta Salad (though we sure love those little palm trees and pineapples). Store-bought pasta (about 12 oz) and bottled poppy seed dressing can be substituted.
