Barbecue Soy Chicken

Everyone loves to grill but do you find yourselves trapped in cooking the same few foods the same way over and over again? Enter a brave new world of Asian Style Grilling with this recipe for Barbecue Soy Chicken. Easy, fast and healthy, this chicken is extremely moist and the flavors of soy sauce, mirin and ginger wake up your taste buds.

- SERVES 4 -

Ingredients:

4 young chickens (spatchcocks), 1 pound each

1/3 cup soy sauce

1 teaspoon sugar

3 tablespoons Mirin

4 tablespoons olive oil

1 tablespoon grated ginger

2 cups salad greens such as watercress and snowpea shoots, for serving

Preparation:

Clean chickens and pat dry with paper towel. Truss chicken wings and legs securely with wetted string and place chickens in a shallow nonmetallic dish.

Combine soy sauce, sugar, Mirin, 2 tablespoons olive oil and ginger and brush over chicken skin. Cover dish with plastic wrap and refrigerate for one hour.

Drain, reserving marinade.

Preheat a barbecue, then brush lightly with the remaining oil.

Grill chickens until golden and tender, 15 - 20 minutes, brushing with reserved marinade and turning chickens during cooking.

Test chicken by piercing the thickest part with a skewer; chicken is cooked if the juices run clear.

Remove from heat and serve hot or cold with salad greens.
