Hobo BBQ Beans

The concept of filling a hollowed out onion with baked beans and cooking them on a BBQ grill was originally created by Stephen Raichlen, the acclaimed author of 22 cookbooks, including “The Barbecue! Bible”. The staff at Gourmet Magic has fashioned an extra-spicy version using the sauces of Chef Edmund Patrick McCarthy – aka “Hoboken Eddie”, a past winner of The Fiery Food Challenge. Enjoy…but keep in mind that this is for those who like it HOT!


Ingredients:

1 can (28 oz.) Bush’s Country Style Baked Beans
8 medium or 4 large sweet onions such as Walla Walla or Vidalia
¼ cup brown sugar
½ cup Hoboken Eddie’s Homemade BBQ Sauce
2 tablespoons Hoboken Eddie’s Mean Green – more if you REALLY like it hot
Salt & freshly ground black pepper to taste

Preparation:

Peel onions and remove stems so that the base of the onions are flat. Hollow out the onions and finely chop the onion removed from the shell. Be careful not to cut through the bottom of the onion shell.

In a mixing bowl, combine chopped onion, baked beans, brown sugar, Hoboken Eddie’s Homemade BBQ Sauce, Hoboken Eddie’s Mean Green, salt and freshly ground black pepper.

Spoon the bean mixture into the onion shells.

Arrange the onions on the grill to the side of direct fire. Grill onions 40 to 60 minutes, depending upon the heat of your grill. Onions are done when they are tender and golden brown.
