Recipe for the Month of November 2002
Lillie’s Southern Fried Turkey Is it surprising that our Monthly Recipe for November is Turkey? Probably not but this recipe is far from traditional and a bit of a surprise. If you are fortunate enough to have a deep fat Turkey Fryer, this recipe for Southern Fried Turkey is filled with a mouthwatering variety of savory seasonings, sure to delight your taste buds. For in the South, food is much more than sustenance…food is the flavor of life! Ingredients: 1 Turkey, approximately 20 lbs. Lillie’s of Charleston Ho-Lotta Seasoning Mix Parsley Flakes, for additional seasoning Marinade Injector Lillie’s of Charleston Low Country Loco Hot Sauce Turkey Fryer Cooking Oil PREPARATION: Fill fryer with enough cooking oil to cover turkey once immersed. Preheat fryer to 325 degrees F. Remove the giblets and neck, and then discard. Thoroughly rinse the turkey and pat dry with paper towels. Season the outside of the turkey with Ho-Lotta Seasoning Mix and parsley flakes. Fill the marinade injector with Low Country Loco Hot Sauce and inject the turkey every four inches across the turkey breast, back and legs. Once oil reaches 325 degrees F, completely immerse turkey in fryer. Let fry for 3 minutes per pound. For instance, the featured turkey is 22 pounds and was fried for 1 hour and 10 minutes. Doneness can be checked with a meat thermometer. A fully cooked turkey should register on the thermometer at about 170 degrees. Transfer to a beautiful platter, garnish with fruit, herbs and serve!
