Strawberry Pie

This strawberry pie is a perfect summer dessert when fresh fruit is plentiful and at its peak of flavor. Using the same recipe, you can also use blueberries, peaches, raspberries, nectarines or a combination of your favorite fruits. Cookie Crust

Ingredients:

½ cup butter, melted
1 cup flour
6 tablespoons powdered sugar

Preparation:

Mix all ingredients well and pat into pie pan. Prick with fork and bake at 350 degrees for 15 minutes. Cool before filling.

Fruit and Glaze

Ingredients:

1 cup sugar
1 cup water
3 tablespoons cornstarch
¼ cup water
3 oz. package strawberry Jello (if using other fruit, choose a flavor to compliment the fruit being used)

Preparation:

Boil sugar and 1 cup of water
Mix cornstarch with ¼ cup of water. Add to boiling sugar mixture. Cook and stir over medium low heat until thick and clear
Add 3-oz. package of Jello and stir well
Wash and dry fruit (slice if required)
Place layer of fruit in crust – drizzle with glaze. Repeat as necessary until crust is filled
Refrigerate for several hours
Remove from frig approximately ½ hour before serving
